Sure, cheese is your life. You make it, you sell it, you eat it—but do you have the credentials to back that all up? Now is your chance to have unequivocal proof of your expertise by taking one of the American Cheese Society’s (ACS’s) 2019 certification exams. The period to apply for either the ninth Certified Cheese Professional® (CCP) Exam or the second ACS T.A.S.T.E. Test™ has now begun. Both exams will be held on Wednesday, July 31, 2019 in Richmond, Virginia, in conjunction with the 36th Annual ACS Conference & Competition.
ACS was among the first established leaders in cheese industry certification, having launched the CCP Exam in 2012. According to a press release, the CCP exam encompasses a broad range of topics including raw ingredients, the cheesemaking process, storing and handling cheese, selecting distributors, marketing and communicating about cheese, nutrition, and regulations and sanitation. Individuals who pass the exam earn the title of ACS Certified Cheese Professional, also referred to as ACS CCP. Along with being one of only around 1,000 ACS CCPs in the United States, Canada, Mexico, Australia, and the U.K., those who pass will also receive an official lapel pin, patch, and certificate.
The ACS T.A.S.T.E. Test, otherwise known as the Technical, Aesthetic, Sensory, Tasting Evaluation, is the second industry credential offered by ACS. The test is a hands-on exam that evaluates cheese professionals’ knowledge and skills in the assessment of cheese, from determining cheese condition and quality to evaluating cheese flavor, body, texture, and appearance. Those who pass the T.A.S.T.E. Test earn the title of ACS Certified Cheese Sensory Evaluator™ or ACS CCSE™, and also receive an official lapel pin, patch, and certificate. ACS reported that there are currently only 30 certified CCSEs in the United States, Canada, and France.
