Welcome to this installment of Beer & Cheese Pairings. I’ve chosen three wonderful cow’s milk cheeses to pair with Track 7’s malty and sweet Bee Line Blonde. Let’s jump right in!
BEER:
Bee Line Blonde from Track 7 is a light ale with a crisp body. Munich and Vienna malts provide nuance, and the incorporation of Sacramento-area wildflower honey to the kettle gives it a dry finish. This tasty beer should pair nicely with these cheeses.
CHEESES:
Red Witch is a raw cow’s milk cheese from Switzerland that is imported by World’s Best Cheeses. It has been aged for nine months in aging cellars which gives it a nutty flavor and a creamy texture. This playful cheese has a cayenne pepper rubbed rind. This cheese paired very nicely with the beer, but didn’t quite balance with its malt flavor.
KoKos® from Cheeseland Inc. is made with fresh, pasteurized cow’s milk and organic coconut cream for flavor and creaminess. It features a nutty taste that is complimented by a hint of sweetness. It paired wonderfully with the beer, highlighting the honey like quality of the ale.
Brillat Savrin from Tradition Briarde is a soft ripened, triple cream brie made with unpasteurized cow’s milk from France. It is very creamy with a wonderfully smooth texture. This was my favorite cheese of the day, but it couldn’t quite master the balance as the previous pair.
