Ambriola Cheese Prepares for Winter Fancy Food Show; John Dammacco Comments

As we near this year’s Winter Fancy Food Show (WFFS), held in Las Vegas, Nevada, from February 6–8, buyers and suppliers alike are preparing. I caught up with The Ambriola Company to learn what the importer plans to showcase at the event.

John Dammacco, Vice President of Sales and Marketing, Ambriola Cheese“We are proudly showcasing our full line of retail packaged DOP and specialty cheeses,” stated John Dammacco, Vice President of Sales and Marketing. “New for us this year is our Locatelli Crema di Cacio e Pepe, which is a 100 percent natural cheese spread and pasta sauce made from Locatelli pecorino Romano, emulsified with crushed black pepper and white pepper added.”

This new offering is the seventh variety in the lineup, which includes Crema di Auricchio Provolone, Crema di Taleggio, Crema di Gorgonzola, Crema di Reggiano, Crema di Reggiano Tartufo, and Crema di Pecorino Romano Locatelli.

The entire line is made with DOP Italian Cheese—DOP stands for “Denominazione di Origine Protetta,” which means Protected Designation of Origin. The DOP guarantees that the milk of the cheese and production are within a certain location in Italy, and that the methods of production are traditional, with fixed storage guidelines. It is a mark of optimal quality and high standards.

The Winter Fancy Food Show, John noted, is a great space to meet with new and beloved customers alike. The innovation aspect of the event is also a draw for the specialty cheese importer.
