Carr Valley Cheese Co.'s Elle Fearing Discusses IDDBA Showcase

Before we know it, we’ll be gathering in Anaheim, California, to scope out the latest in specialty food. But before International Dairy Deli Bakery Association’s (IDDBA) show kicks off June 2–4, I wanted to chat with the companies who would be in attendance.

Let’s hear from Carr Valley Cheese Co. on what it will be showcasing at the event.

We’ve seen this gap in the market, and offering this option to our customers and loyal consumers was important.”

Attendees can also follow their noses to the booth, as the team will be frying up some of its famous Bread Cheese® and offering pairing ideas and applications to share with consumers.

“My current favorite is our Bacon Bread Cheese drizzled with local maple syrup, also known as the Breakfast of Champions,” Elle shared.

That is one combination I will certainly be trying!

The company continues to see growth in the snack category, and it will have its full Snack Stix line on display, such as Goat Cheddar and Native Sheep.

Going into June Dairy Month, Elle told me that Carr Valley hopes to remind attendees/buyers that the company sources all of its milk from local dairy farms in Wisconsin.

“These farmers and families have been part of our network for, in many instances, generations! The stories, people, and traditions behind the products are so important,” she explained. “Carr Valley is known as the most-awarded cheese company in the world, with over 850 national and international awards for our products. We’ve got a team of dedicated cheesemakers and two Master Cheesemakers that help make this happen, and we’re very proud of that!”

One of those Master Cheesemakers, Sid Cook, is always working on something, as Elle noted.

“We’re closely following the market and what’s trending to see what we’ll make next. Customers are always welcome to inquire about doing special products. We love the creative process!,” she said.
