Summer Fancy Food Show is fast approaching, and while attendees are gearing up for samples galore, Philosophy Foods’ Lady Edison Pork brand has teamed up with Smoking Goose to deliver products that won’t disappoint. The company will be showcasing its “Lady Goose” Rust Belt Salame and ‘Nduja—a spreadable pork salame with Calabrian peppers and sweet pimentón. Lady Edison debuted its Extra Fancy Country Ham at Winter Fancy Food Show in January, after which it took the specialty food world by storm, being sold at restaurants like David Chang’s Momofuku and retailers including Market Hall Foods and Zingermans.
“Using whole muscle cuts from our Animal Welfare Approved, heritage breed hogs, the Lady Goose Rust Belt Salame is mixed with garlic and lemon peel and cold smoked by our friends at Smoking Goose in Indianapolis,” Lady Edison Founder, Sam Suchoff, commented in a press release.
Lady Edison takes the care of the animals it uses very seriously, only using animal welfare approved hogs from a North Carolina cooperative, to create its charcuterie—using traditional and sustainable methods.
“We spent a day visiting farms last week. It is beyond inspiring what Sam has done to help the family farmers in North Carolina,” said David Yourd, Philosophy Foods Founder. “We could not be more proud to partner in his project and sell Lady Edison exclusively through Philosophy Foods.”
