With Winter Fancy Food Show behind us, companies are reflecting on their programs’ success. I spoke with Isabelle Schilt, Marketing Manager, to learn more.
“At the show, we focused on our retail line and recent World Cheese Award winners, Alpenhorn and Brigand du Jorat,” Isabelle explained. “These two cheeses were the highlight of the booth.”
And for good reason! Alpenhorn won Super Gold at the WCA and was ranked among the top four cheeses. Brigand du Jorat, the newest addition to Mifroma USA’s specialty cheese assortment, was awarded Silver.
“Alpenhorn is produced in the Appenzell region of Switzerland, utilizing fresh milk from Braunvieh cows (Brown Swiss breed), known for their well-developed horns, which are beautifully maintained,” Isabelle noted. “The milk is delivered daily to local dairies and refined with cream, giving Alpenhorn its creamy texture. The flavor profile is an exceptional balance of nutty, earthy, and brothy notes with a subtle sharpness.”
Not only is the cheese a testament to the harmonious relationship between heritage and innovation, it reflects a commitment to maintaining high standards of quality, animal welfare, and sustainability.
Brigand du Jorat is a semi-hard, raw milk cheese produced in a small dairy in Saint-Cierges (Vaud), Switzerland. It boasts a tender texture and savory flavor profile.
“The cheese wheels feature a fir tree design on the rind and are hand-washed with Raisinée, a syrup made from local apples and pears, which gives the wheels their deep coloring,” Isabelle added. “Le Brigand du Jorat is named after the famous thieves who once populated the forests of the Jorat region and now vow to protect and sustain a healthy forest. Mifroma has committed to expanding the Brigand du Jorat’s efforts through a partnership with the Arbor Day Foundation, promising to plant at least 3,300 trees in forests throughout the United States.”
With a retail line that includes Swiss classics such as Gruyère AOP, Emmentaler AOP, Appenzeller, Tête de Moine AOP Rosettes, Raclette Slices, and Fondue—all in retail-ready packaging—Mifroma has a cheese option for any cheese lover.
