Keeping up with constantly evolving consumer trends is a challenging task, but one that is vital to the success of suppliers in the industry. Last November, the Specialty Food Association revealed its trend predictions for 2021, which included several categories that certainly guided shoppers' buying behaviors this year. With the last set of trends so spot on, we're sure that this year's list will map out the path to even higher register rings.
"As we head into the second year of the COVID-19 pandemic, comfort is an overriding theme," said Denise Purcell, Vice President, Content and Education. "The events of the past 18 months have consumers seeking out familiar and comforting foods and beverages, but often with a twist for some excitement, or with specific diets and health concerns in mind."
Throughout 2021, the Specialty Food Association (SFA) Trendspotter Panel virtually assembled at three separate digital SFA shows to research thousands of specialty food and beverage products from around the world, as explained in a press release. After recording the extensive findings, Purcell deciphered five trends that will drive the growth of the $170.4 billion specialty food industry in 2022.

Each of these exciting new trends can be found throughout the 2022 Winter Fancy Food Show, which will take place at the Las Vegas Convention Center February 6-8 in Las Vegas, Nevada. The anticipated industry show will feature food and beverages from around the world; member education and panel discussions; What's New What's Hot showcases; sofi Award winners from 2020 and 2021; Startup Alley; and Incubator Village, chocolate, plant-based, cheese, national and international pavilions.
