When US Foods announces its new Scoop issue, I have to take a second and contain myself. New global recipes that could potentially appear across a variety of foodservice operations? Count me in! I had the chance to dive into one particular product—the Devonshire Cheesecake Topped with Honey and Almonds—all while getting the inside scoop from Stacey Kinkaid, Vice President of Product Development and Innovation.
“Our inspiration came from our desire to make global discovery easy for our restaurant operators and their diners,” stated Stacey. “For this launch, we focused on Latin American, Asian, and Middle Eastern influences. Research shows that 54 percent of consumers have gone out of their way to try a novel global food and it’s clear that today’s diners are hungry to explore new flavors. Our operators are eager to stay on-trend and meet evolving diner demands, but they don’t always have the time, ingredients, or equipment to deliver products that have the right format or flavor. It’s our job to deliver our operators the right on-trend products that are approachable and versatile—products that are easily integrated onto their menu.”
Partnering with Chef Sameh Wadi, Executive Chef and Owner of World Street Kitchen, the US Foods’ team created the Devonshire Premium Cheesecake Topped with Honey and Almonds. Influenced by flavors of the Middle East, the cheesecake is made with mascarpone cheese, cream cheese, real honey, and a cardamom-spiced graham cracker crust. Decadent and delicious, this product is a must-have addition to foodservice menus.
“We find that restaurant operators like to serve this product as-is,” Stacey shared. “Our product development team worked very hard with Chef Wadi to get the perfect texture and flavor combination so that the cake can easily stand on its own. The hint of cardamom in the graham cracker crust adds the perfect Middle Eastern influence to the cake and helps bring flavorful adventure to the dessert. In addition, the Devonshire Premium Cheesecake Topped with Honey and Almonds comes pre-baked and pre-sliced so it allows for back-of-house ease.”
