In celebration of American Cheese Month, Tillamook recently hosted a virtual Cheese Talk and Tasting featuring Jill Allen, Director of Research and Development at Tillamook County Creamery Association, as well as Michael Landis, American Cheese Society Evaluator, World Cheese Judge, and International Cheese Awards Ambassador.
The two appeared on screen on May 18 to discuss the company’s farmers, the Creamery, cheesemaking, and some of Tillamook’s finest cheeses. During the event, Jill and Michael tasted the Tillamook Cape Meares Cheddar, Tillamook Smoked Medium Cheddar, Tillamook Maker’s Reserve 2015, and Tillamook Maker’s Reserve 2012 along with each of their suggested pairings.
“I was born in Tillamook, Oregon, and am proud to have been able to work for a company with strong values and an unwavering commitment to quality for the last 20 years,” said Jill. “What a better way to celebrate American Cheese Month than with Tillamook Cheese and Michael and I coming together from opposite coasts for the passion of pairing Tillamook Cheese with our favorite local spirits and artisan foods.”
From fresh produce to artisan honeys to wine and beer, I alongside industry attendees got a glimpse into the minds of these two cheese experts.
The cheese tasting provided unique insights into what makes Tillamook’s cheeses so unique and how retailers might best merchandise these products in order to tap into unique eating experiences.
“The month of May is the American Cheese Society’s American Cheese Month, and I choose to help celebrate by bringing some of our American cheesemakers to these webinars. Tillamook has created Maker’s Reserve, this amazing line of vintage cheddars, that brings a diversity in flavors unique to each cheese,” added Michael. “With the different flavors of each of these cheddars, Jill and I were able to demonstrate how you can create remarkably diverse pairings with each of the cheddars. I think it is a tribute to the quality of the cheesemaking at Tillamook that you can have a cheese so well-loved in the U.S. and abroad and that gives you such rich and unique flavor profiles.”
