While the Specialty Food Association’s (SFA) Winter Fancy Food Show may be over, we here at Deli Market News are still virtually occupying the show floor as we catch up with some of this year’s attendees. Recently, I touched base with Interval Export’s Nicolas Lecuque, who gave me a recap of the company’s showcase.

Nicolas Lecuque, Owner and Managing Partner, Interval Export“Consumers are actively seeking authentic, premium-quality cheeses that tell a story and offer a unique taste experience, and in response, retailers and foodservice operators are expanding their selections to cater to a more sophisticated cheese audience,” said Nicolas, Owner and Managing Partner. “The U.S. cheese market is seeing strong demand for French PDO cheeses, especially those with rich heritage and sustainability commitments.”

Interval Export’s expansive Winter Fancy Food Show showcase included a diverse range of cheeses from all its partner dairies, displaying a dynamic mix of best sellers and exciting new additions. This includes:

  • Fromager d’Affinois (Guilloteau) – A beloved double-cream cheese in the U.S., available in classic and innovative flavors.
  • PDO Comté (Fromageries Arnaud) – Artisanally crafted, aged to perfection, and a must-have for premium cheese counters.
  • PDO Roquefort (Maison Gabriel Coulet) – An iconic blue cheese with a rich history, showcasing its creamy texture and bold flavor.
  • PDO Blue d’Auvergne & Raclette (Livradois) – Meeting the rising demand for blue cheese and washed-rind cheeses that will melt perfectly.
  • Goat Cheese (EURIAL) – Featuring ripened varieties under the iconic brand Soignon to tap into the growing interest in goat’s milk cheese.
  • Ossau-Iraty & Basque Specialties (Agour) – Highlighting its expertise in high-quality, traditional sheep milk cheeses.
  • Brie (Laita) – A classic staple in any cheese selection, offering a creamy and mild profile.
  • Premium Triple Cream Brie (Dongé) – An exceptional, ultra-rich cheese that caters to gourmet and specialty retailers.
  • Fleur des Alpes (Verdannet) – A perfect cheese for Tartiflette, meeting the increasing demand for hearty, comfort-food cheeses.
  • Echiré Butter – Known as the best butter in the world, Echiré has an unparalleled reputation among chefs and butter connoisseurs.

“WFFS remains one of the most critical events for our growth strategy because it allows us to deepen relationships with key retailers and distributors, strengthen partnerships and identify new business opportunities, enhance brand recognition, and spot upcoming trends and innovations,” Nicolas adds. “It also allows us to test new product launches, gaining valuable real-time feedback from buyers and industry professionals.”
