“Olli Salumeria was founded in 2010, in Richmond, Virginia, but the company’s origins go back much further,” began Oliviero “Olli” Colmignoli, Founder and President. “My family has produced the world’s finest salami for over 170 years, and we continue that legacy. My great-grandfather, Ferruccio Fiorucci, produced his first salami in 1850, and we maintain many of the same recipes today. After our initial founding and early years, we moved across the United States in 2015 to establish a state-of-the-art processing facility and headquarters in Oceanside, California, which we selected for its Mediterranean, Italian-like climate.”
The salami maker was born out of Olli’s desire to introduce the U.S. market to the sweeter, less acidic taste of salami slow-cured in the Italian tradition, with a focus on a resolute commitment to authenticity and quality. From farms committed to raising 100 percent vegetarian-fed, antibiotic- and hormone-free pork, to state-of-the-art processing and packaging facilities, Olli combines genuine Italian recipes, curing techniques, and simple, high-quality ingredients to produce 100 percent nitrate- and antibiotic-free Italian salami.
“Our unique curing process is a major factor in the distinctive taste of Olli salami. Great-tasting salami requires time for the meat to ferment and take on its complex flavor through a slow-cure production cycle. The resulting salami has a robust flavor, not only from its spices, but by a combination of method, meat, starter culture, and sugar,” Olli told me.
Olli Salumeria focuses on six distinct product lines: Snack Packs, Antipasto Trays, Salamini, Pre-Sliced Salami, Salami Chubs, and Bulk Salami. The company has national distribution through Walmart, Amazon, Whole Foods Market, plus select Publix and Albertsons locations, along with regional supermarkets and specialty retailers. Olli continually focuses on developing new products and varieties that make it easier for North American consumers to enjoy the flavors of authentic Italian salami.
“This year, we are adding new varieties to our line of Olli Snack Packs, including Olli® Pepperoni & Mozzarella Snack Pack. This pairing of American-style Pepperoni, fine Mozzarella cheese, and artisanal crackers offers a convenient high-protein snacking option,” Olli divulged. “We’re also continuing to innovate with new products that capitalize on the growing charcuterie trend. These include five varieties of ready-to-serve Antipasto Trays, featuring 12 oz of salami, cheeses, and olives or other vegetables packaged for easy entertaining. The latest in this line is Olli Antipasto Tray with Cornichons & Onions. We are also introducing a new Olli® Salamini and Cheddar Cheese Curds snack this year, which pairs two favorite flavors in a convenient package.”
