The International Deli Dairy Bakery Show is here, and Point Reyes Farmstead Cheese (PRFC) is looking to pack a punch on the floor with its Toma cheeses. Aptly calling its line Toma with Attitude, the three unique flavors will have buyers clamoring to add them to their cheese cases.

Connie Concon, National Sales Director, Point Reyes Farmstead Cheese“We like to describe Toma as an Italian-inspired farmer’s cheese,” Connie Concon, National Sales Director, explains. “Being part young Gouda and part traditional Havarti, it’s very versatile in meltability, shredability, and cooking usage. With a rich texture and buttery flavor, our Toma is perfect for everything from paninis and mac and cheese to a nice glass of wine, cold beer, or a bubbly cider and a charcuterie board.”

In creating Toma, the Point Reyes Farmstead Cheese team was looking to bring to market something with a complex, sophisticated taste, but in a more approachable style. In other words, a more subtle artisan cheese for consumers to enjoy. The company pasteurizes the fresh whole cows’ milk to make this cheese, bringing the wheels immediately out of the forms and aging the waxed wheels for 90 days.

Hitting the show floor at IDDBA, Point Reyes Farmstead Cheese will be spotlighting its Toma with Attitude line

After launching its original Toma, the cheesemaker launched its lineup of flavored Tomas at the IDDBA Show in 2019. This year, after some recent award-show wins for the exciting flavors, PRFC will be promoting its TomaProvence, TomaTruffle, and TomaRashi varieties at IDDBA once again.

“Our TomaProvence features very traditional herbs. It has rosemary, basil, and savory wild thyme that create a delicious flavor combination,” says Connie, getting my mouth watering. “To me, it’s like comfort food. You still get that buttery, creamy flavor, but with a hint of the Herbs de Provence to provide a great earthy tone.”

Next in the Toma with Attitude line is its TomaTruffle, which gets its flavor from Sabatino truffles, combining the aromatic flavor of truffles with the buttery tanginess of Toma. Due to its high-quality flavor, the variety recently won first place in the open class: semi-soft, flavored category at the World Championship Cheese Contest and was recognized as one of the top 20 cheeses in the world.

Rounding out its Toma line, TomaRashi has a unique flavor profile gaining popularity with consumers, and recently won a Good Foods Award.

“A blend of heat, umami, and nutty flavors, Shichimi Togarashi adds a flavorful twist to our classic Toma,” describes Connie. “Because of the combination of nori, toasted sesame, poppy seeds, and chili flakes, you get a warm heat when you taste it, making it ideal for melting on scrambled eggs or wrapping in seaweed and enjoying with a gin & tonic. Togarashi is becoming more popular with many consumers, so they are always excited to taste this one-of-a-kind variety.”

If the distinct flavors of these cheeses weren’t enough to pique consumer interest, Point Reyes Farmstead is also a women-owned brand and is Women’s Business Enterprise National Council (WBENC) certified. The company will now be including the WBENC logo on its cheese products.
