Czech Town Cultivates Reputably Stinky Cheese Into Ice Cream Delicacy

The cheese and ice cream segments are no stranger to innovative flavor profiles and the meld of sweet and savory into one creamy bite, but ice cream and strong-flavored cheese together? One dessert maker in the Czech Republic has transformed one reputably odorous cheese into a creamy dessert which has his customers clamoring for more

Café owner and ice cream connoisseur Roman Cincara told Reuters that he took a mature cheese, Olomoucké Tvarůžek (or plural, Tvarůžky) and transitioned the traditional cheese into a sweetened ice cream.

"Lot of people think it will be salty, but it is really a fairly sweet ice cream with a Tvarůžky cheese taste," Cincara said.

TvarůžkyTvarůžky, which boasts a particularly strong taste and smell, is usually enjoyed with bread, beer, and sometimes onions. To balance out its pungent taste, Cincara said that he adds sugar and other ingredients, with the odor somewhat dampened by the low temperature of the ice cream.

"Superb. Sweet-salty, great. It really tastes like Tvaruzky," finished Cincara, telling Reuters that his café sold all 400 available portions over the weekend. 

Cincara’s home town of Lostice is also heralded as the home of Tvarůžky cheese. The cheese has reportedly been produced in the eastern Olomouc region since the 15 century, and gained a “protected geographical indication” status from the EU in 2010.
