Premium producer of dairy goat products LaClare Farms has announced a large-scale expansion to its processing facility, as well as the addition of a well-known industry expert to its staff.
Larry Hedrich, who along with his wife, Clara, co-founded, owns, and operates LaClare Farms, noted, in a press release, that the expansion and renovation of facilities at W2994 County Road HH in Malone will “offer a tremendous opportunity for [the company] to grow.”
“We are now able to expand our cave-aged Chandoka-aging program as we move it to our location,” where the company operates its goat farm, a restaurant, and a retail shop, noted Hedrich.
One of LaClare’s most popular offerings, Chandoka cheese is a part cow/part goat milk, mild fruity cheese with rich cheddary notes. As the cow milk develops fruity characteristics, the goat milk picks up sweet, tangy notes, aging into a uniquely flavorful cheese.
The company also announced that it has hired renowned affineur David Rogers to help manage the new aging addition at the family-operated farm’s new facility.

“David has played a major role in the success of our cave aged cheese and to now have the opportunity to have him on-site as the goat-dairy-product market continues its rapid expansion allows us to keep up with the current market and also continue to be innovative,” said Hedrich.
In the company’s press release, Hedrich praised Rogers as “part of the family” and pointed out that Rogers began working with the Hedrichs more than five years ago, through Standard Market in Westmont, IL.
“This is a great opportunity to work with the Hedrich Family in one of the most highly-awarded and creative processors in the world,” Rogers added. “Cheesemaker Katie Hedrich Fuhrmann and I have a long history of success together, and now we will be able to work side-by-side every day. It’s exciting to look to the future at LaClare.”
