Consumers are one step closer to living the dream of being able to eat an entire sheet of delicious baked cheese. With Lotito Food’s new Folios cheese sheets hitting both foodservice and retail markets, consumers can wrap their crispy cheese creations around anything imaginable. I spoke with Debbie Seife for Lotito Foods about what makes Folios such an exciting innovation.
“Folios are lightly baked, pliable, one and a half ounce sheets of carb-free, gluten-free, and high protein cheese,” Debbie explains to me from the floor of Summer Fancy Food Show. “It’s perfectly portioned, it’s exactly the right size, and [consumers] can use it as the bowl and be very creative with it.”
Folios are currently available in three varieties—parmesan, cheddar, or Jarlsberg—the third of which comes from the company's partner, Norseland. Available in packs of 4 for retail and 10 and 12 packs for foodservice, Folios fill the need for a baked cheese solution across categories.
