This June, three of the specialty cheese’s most storied brands made headlines when Wisconsin’s LaClare Family Creamery and Saxon Creamery announced that they had joined together alongside Pennsylvania-based Lamagna Cheese to form Mosaic Meadows.
The merger would allow each of these family-operated cheesemaking operations to expand on their award-winning successes in cheesemaking and pool their resources in terms of marketing, sales, and customer service.
The deal would bring together an almost unprecedented collection of artisanal cheese talents. Saxon Creamery’s Plant Manager and Cheesemaker Eric Stephanpohl could collaborate with LaClare Cheesemaker Katie Fuhrman, and Affineur David Rogers—the maestro behind the Creamery’s famous Cave-Aged Chandoka—who, in turn, could bring his knowledge to bear on Saxon Creamery’s artisan pasture raised cow’s milk cheeses. To LaClare’s growing goat cheese operations, Saxon Creamery brought an expansive line of cow’s milk cheeses, SQF certified facilities, and aging capacity in cellars that had housed the company’s iconic Big Ed’s and Green Fields cheeses. And Mosaic Meadows would round out its offerings by adding classic Italian cheese offerings under the Lamagna brand, bringing mozzarellas, ricottas, provolones, and other popular Italian cheeses into the fold while expanding the company’s presence in the Northeast.
Mosaic Meadows is currently integrating the operations of its constituent companies, working to enrich its operations and grow its marketing, sales, and customer service capabilities while preserving the integrity of its brands and the products that made each of its brands globally recognized.
In 2018, LaClare’s Cave-Aged Chandoka and Saxon Creamery’s Big Ed’s Gouda, Big Ed’s Smokehaus Gouda, and Asiago Fresca Cheese all took home honors at the 2018 World Championship Cheese Contest in Madison, Wisconsin.
And Mosaic Meadows is currently expanding its appeal beyond the specialty cheese set, introducing a new line that takes aim squarely at those consumers who tend not to stray from the dairy aisle for their cheesy needs. The company’s new Simply Dairy line of pre-sliced, Wholesome and Pure™ goat milk cheeses is available in popular varieties like Cheddar, mozzarella, and Jack.
