Schuman Cheese is bringing its entire line of Wisconsin cheeses to New Orleans next week for International Dairy Deli Bakery Association Show. This year, Schuman Cheese is celebrating its Wisconsin heritage, as many of Schuman’s cheeses are crafted on the premise that there’s no better place than Wisconsin to find the finest quality milk. Specifically, the rich land of the Lake Country region is home to dairy farms that ensure every gallon of fresh, quality milk is worthy of the Schuman name and boasts a water and mineral content similar to the European terroir that has produced some of the world’s most celebrated cheeses.

The Turtle Lake, Wisconsin-based creamery uses milk from local family farms located within 50 miles. From copper vats to natural Alpine cave-aging techniques to hand-smearing that produces a rich, decadent flavor, this line puts an American twist on European heritage.
Yellow Door Creamery Hand Rubbed Fontina
A perfect balance of texture, dimension, and flavor in every bite, the hand-rubbed wheels of smooth and creamy Fontina are not only a visually interesting cheese, but a cheese made with care by Wisconsin cheesemakers.
