Wisconsin Milk Marketing Board Releases Newly Updated Cheesecyclopedia®

The cheese-centric world has been presented with a savvy new tool to steer consumers through the vast collection of Wisconsin cheeses. The Wisconsin Milk Marketing Board (WMMB) is releasing a newly updated Cheesecyclopedia®.

Sara Hill, Manager of Education and Training, Wisconsin Milk Marketing Board“There’s so much to learn in the exciting world of cheese,” said Sara Hill, Manager of Education and Training, according to a press release. “With Cheesecyclopedia, we’ve put together the most comprehensive online course available as a resource to professionals and cheese lovers everywhere.”

A free online self-study course on Wisconsin cheese varieties and how to profit from an investment in Wisconsin cheese, the new edition of the Cheesecyclopedia was developed for retail and foodservice professionals.

In addition to the Wisconsin cheesemaking process ‘from pasture to plate,’ the updated tool includes:

  • The latest insights on merchandising and menuing cheese
  • The basics of proper cheese storage and handling practices
  • Delicious recipe and pairing ideas
  • Updated information on the newest and most unique cheese varieties such as raclette, ricotta salata, and crescenza-stracchino

The WMMB noted that the Cheesecyclopedia is accredited by the American Culinary Federation (ACF), enabling foodservice professionals who complete the program to earn two continuing education hours (CEH). The Cheesecyclopedia course can be completed for free by visiting here or here. 80 CEHs are required to maintain ACF certification.
