Wisconsin Milk Marketing Board's Abby Despins Talks Upcoming Dairy Trends

When you want to know the hottest trends in cheesemaking, where else would you look other than the great dairy state of Wisconsin? Abby Despins, Director of National Product Communication for the Wisconsin Milk Marketing Board (WMMB), was kind enough to give us the inside scoop from this coalition of the state’s biggest dairy producers.

“A really big trend in cheese is the spice factor,” Abby tells me from the IDDBA show floor. “They’re going even above the habanero and going crazy about the amount of spice they’re putting in their cheeses.”

Also on the agenda in cheese trends are spreadable cheeses, Abby tells me. Great for parties and kids, WMMB says its spreadable cheeses are all-natural and additive-free.

“We have a lot of dairy farmers in Wisconsin—99% of them are family owned,” says Abby as she talks about what sets the state’s dairy producers apart from the rest. “All of our cheesemakers receive high-quality milk from our farmers really close by, sometimes just down the street.”
