Eclipse Foods Debuts First-Ever Non-Dairy Whole Milk That Truly Replaces Dairy; Thomas Bowman Details

Eclipse Foods, the leader in non-dairy products that are indistinguishable from conventional dairy, announces its new Non-Dairy Whole Milk. Unlike most plant-based milks that aim to imitate traditional dairy milk, Eclipse’s latest innovation truly replicates milk. Debuting at the 2025 Specialty Coffee Expo in Houston, TX at booth #2306, the new line will target food service partners, including coffee shops, smoothie bars, bakeries, and cafes nationwide.

Eclipse’s Non-Dairy Whole Milk delivers on flavor, stability, sweetness, and whiteness, the main categories that other plant-based milks fall short in. Its stability allows the milk to foam in hot and cold milk — and hold that foam as long, if not longer, than conventional dairy — and won’t settle at the bottom of a drink. The milk has a neutral flavor, unlike the earthy flavors of most plant-based milk alternatives on the market, satisfying the consumer with all of the best traits of conventional milk, minus the dairy.

Inspired by the world-renowned dairy region of Hokkaido, Japan, the brand wove in Japanese inspiration into the packaging design. To create the milk, the R&D team at Eclipse, led by Ben Roche, VP of Product Development, took isolated proteins from peas and chickpeas to replicate the molecular structure of milk.
