A little-known fact about me is that I have a gluten allergy. I know, heart-breaking, but not as devastating in this day and age. In fact, our industry is quickly innovating the gluten-free market so that those with physical limitations to this very prevalent ingredient don’t need to pine after anything in the grocery aisle. But, boy, do I miss burritos.
