Schaller & Weber Announces Partnership With Lady Edison

A meat-centric partnership has come to fruition in the specialty space. New York-based Schaller & Weber has welcomed a new label to its distribution network, teaming up with Sam Suchoff of Lady Edison Pork to exclusively offer its products. The North Carolina-based producer is known for its Extra Fancy Country Ham, which comes either sliced or whole.

According to an announcement from Schaller & Weber, the products will be available for distribution out of the delicatessen’s New Jersey-based warehouse. Lady Edison sources whole hogs from the North Carolina Natural Hog Growers Association (NCNHGA), ensuring the highest quality possible. The NCNHGA comprises 19 farmers whose operations are non-GMO certified and Animal Welfare Approved. The hogs are 100 percent pasture-raised in their natural habitat, the announcement stated.

Dry-cured, unsmoked, and aged for two years, the Extra Fancy Country Ham follows the old traditions of NC hams created in cured rooms that mimic the natural seasons. For about 35 days, the hams begin in the Winter Room before moving to the Spring Room for over 90 days. The hams become shelf stable after 60 days in the Summer Room, before moving on the the Extra Fancy Phase that allows the hams to age for an additional year.

With these products exclusively offered by Schaller & Weber, I foresee significant growth for the company in the coming months, especially as we approach the holiday season.
