Bagels have always been that chewy baked good that I can’t ever seem to make at home. So when I come across those skilled chefs that can build a business off of fresh-baked bagels, I am an immediate fan. Wake ~N~ Bagel, developed in response to rising demand, is taking the country by storm, starting in the freezer section. The woman-owned company debuted at Winter Fancy Food Show for the first time in January, where attendees (and bagel-lovers like myself) got hooked on the baker’s three varieties: Plain, Onion, and Hiker (Everything).

Angelina McClean, Vice President, Wake ~N~ Bagel“We knew we had a great product and idea, and that the show would be the perfect place to debut our Wake ~N~ Bagel, but we were blown away by the response we received there,” Angelina McClean, Vice President and daughter of Francesca Fericano, Founder, tells me. “Now, we are working as fast as we can to expand to meet the demand for our product.”

With the demand for convenience and high-quality products still high, Wake ~N~ Bagel exceeds expectations with its innovative approach to the freezer aisle. Angelina also hinted that the company could possibly break into a new market.

“There is definitely a foodservice opportunity for us as well, and we are working on that, but right now, we are focused on expanding our operations to meet increased demand. Our plan is to distribute our product to the West Coast and the Western States,” Angelina tells me. “We value the relationships we create with retailers and distributors and know it will continue to be mutually beneficial for everyone involved.”

Francesca and Angelina first began their bagel operations as Little Shop of Bagels in Ashland, Oregon, over 25 years ago. In response to rising tourist demand for its delicious bagels outside of Ashland, Wake ~N~ Bagel was born. The bagels are made from several organic flours and grains, non-GMO, and stand out as a high-quality product that customers in Specialty and Natural Foods markets will appreciate. With over 25 years of success, one could say the recipe is flawless, even to the discerning New York bagel lover.

“Our bagels are authentic and have won over many skeptics from New York and the East coast. We’ve got great branding and packaging, a fresh concept, and we don’t compromise on quality,” continues Angelina. “Also, if you’ve never had a fresh, hot bagel out of the oven, you are missing out. It’s a completely different experience than one that’s been sitting for a few hours, or days. If you have had a bagel hot out of the oven, then you know exactly what I’m talking about. It’s mind-blowingly good.”
