Artisanal Premium Cheese Releases Raw Cheeses


New York, NYArtisanal Premium Cheese offers a line of premium raw cheeses. Raw milk cheeses have not been heated above 100ºF. This allows their naturally occurring enzymes to continue to impart a richer and fuller flavor as the cheeses age in Artisanal's caves, according to a press release. Two of the cheeses highlighted are the Fiscalini Cheddar and the Uplands Pleasant Ridge. The Fiscalini Cheddar is the product of master craftsman Mariano Gonzalez. In Modesto, CA at Fiscalini Farmstead, Mariano makes his world-class raw milk cheddars using traditional methods and aging them for at least 16 months. Fiscalini Bandaged Cheddar is said to be a balance of buttery, grassy, and savory flavors. This cheese pairs well with an American craft ale, or wines like Pinot Noir, Gamay, Zinfandel, Chardonnay, and Grenache. Uplands Pleasand Ridge is an award-winning farmstead cheese. It is a product of Wisconsin. It is said to have a nutty, clean flavor and a milky finish, which shows off the extremely high quality of the cow's milk that is used.
