For this week’s Beer & Cheese Pairing, I picked three diverse cheeses to pair with Coronado Brewing Company’s Mermaid’s Red™ amber ale. With all of these delicious flavor combinations, let’s jump right in.
BEER: CORONADO BREWING COMPANY’S MERMAID’S RED™
Coronado Brewing Company's Mermaid’s Red™ is an American amber ale loaded with Cascade hops. Its fresh floral aroma and sharp bitter notes deliver a kick of roasted malts that fades into a rich, chocolaty finish.
Cheeses:
Two Year Aged Cheddar from Grafton Village is a handmade, raw milk cheese from Vermont. With a mellow tartness and a beautiful creamy quality, this cheese is great on its own or with a sturdy cracker. This cheese paired beautifully with the ale, showcasing the individual flavors.
Bijou from Vermont Creamery is an aged goat cheese “Crottin.” This geotrichum-rinded cheese has a delicious yeasty flavor that is uniquely sweet. It is dried and ripened for one week and gains sharpness and complexity after thirty days. Bijou and the Mermaid’s Red™ paired deliciously. With a harmonious balance of flavors, this was my favorite of the day.
Bay Blue from Point Reyes Cheese is a rustic-style blue cheese reminiscent of Stilton. It is aged 90 days and boasts a mild and mellow blue-mold flavor with earthy notes and a salted-caramel finish. This was my favorite cheese of the day, but really overpowered that ale.
