Welcome to this installment of Beer and Cheese Pairings. This week, I’ve paired three tasty imported cheeses with Track 7 Brewing’s smooth and earthy Soulman Stout. Let’s get started.
BEER:
Soulman Stout from Track 7 Brewing is a foreign extra stout with a slight earthiness from the East Kent Golding hops. Its flavor profile is rooted in roast coffee and chocolate. This stout should provide a unique partner for these three cheese pairings.
CHEESES:
Murray’s English Cheddar is a fresh cow’s milk cheese from England’s West Country imported by Murray’s Cheese. This offering is carefully crafted into a savory cheddar that features an unusual depth of tangy, sweet and nutty flavors. This cheese paired very nicely with the stout, contrasting the deep flavors of the beer and the tangy tones of the cheddar.
Mitibleu is a raw sheep’s milk cheese from the mountains of La Mancha that is also imported by Murray’s. The blue-green veins shoot through this firm, moist cheese that packs an intense mineral zing. This cheese paired the best with the stout, creating a very balanced overall flavor profile and very pleasant mouth feel.
Champignon Mushroom Triple Cream Brie is a delicious cheese from Kaäserei Champignon and imported by Tony’s Fine Foods. Inside this cheese are champignon mushrooms, called white or button mushrooms here in the U.S., that are hand picked in Germany for optimal flavor. It is made from pasteurized cow’s milk exclusively from the Allgäu region of Bavaria, Germany. This was my favorite cheese of the day, but it unfortunately lost its mushroom wonderfulness when paired with the Stout.
