Welcome to this week’s installment of The Butcher Block. I’ve got three fantastic fine artisan meats to share with you. Let’s jump right in!
Olympic Provisions’ Chorizo Rioja, from Oregon: This Spanish-style salami is both sweet and smoky with paprika, garlic and oregano. It is made with Carlton Farms heritage pork. The flavor is bold and persistent. It pairs great with red wine.
Creminelli’s Varzi, from Utah: This salami has a coarse grind and is spiced with notes of nutmeg and clove. It has a delicate and approachable flavor that is at home on a sandwich or on an antipasto plate. This slightly sweet flavor profile paired very nicely with a plain salted cracker.
Olympic Provisions’ Loukanika, from Oregon: This Greek salami is flavored with equal parts garlic and cumin with just a touch of orange zest. I was surprised that the pork and orange peel paired so well. It created a rich flavor profile that I thoroughly enjoyed.
