This week I explored a variety of cheese pairings with Ruhstaller’s Gilt Edge. I decided to try three cheeses that ranged from mild to yeasty. Let’s get started!
Beer: Ruhstaller’s Gilt Edge
Ruhstaller’s Gilt Edge is a refreshing and flavorful California grown lager. With a sweet and slightly floral taste, it should pair well with a variety of cheeses.
Cheeses:
Left-Right: Lamb Chopper®, Nicasio Reserve, Franklin's Teleme
Lamb Chopper® comes from Cypress Grove Chevre. It is made exclusively made in Holland and aged just 3 to 6 months. This delicious and buttery sheep milk cheese was my personal favorite of the day. That being said, it didn’t make the best pairing. The flavors of the beer were a bit lost.
Nicasio Reserve comes from Nicasio Valley Cheese Company. This is a delicious Swiss-Italian mountain cheese that boasts a rich flavor. It is aged for at least three months to really allow that flavor to develop. This pairing was my top of the day. The richness of the cheese was really complimented by the floral tones of the beer.
Franklin’s Teleme comes from the Mid Coast Cheese Company. This soft, creamy white cheese has a bit of a tangy and lemony flavor and a soft quality. It also made a good pairing with the Ruhstaller but wasn’t quite as balanced as the Nicasio.
