Cowgirl Creamery is now launching its St. Patrick’s Day Collection of cheeses! The collection includes St Pat from Cowgirl Creamery, Bandage-Wrapped Cheddar from Fiscalini, and O’Banon from Capriole, according to the company's website.
St Pat is made with whole organic milk from John Taverna’s Chileno Valley Jersey Dairy and is wrapped with stinging nettle leaves, which give it a smoky, artichoke-like flavor. After three weeks of aging, this cheese is mellow, soft, and full of flavor, according to the company website.
The Bandage-Wrapped Cheddar is a tangy, traditionally-made cheddar wrapped in cheesecloth. It’s hand-turned for its first few months in the aging room.
O’Banon was named for the French chevre on which this cheese is based. These hand-ladled rounds of goat’s milk are wrapped in chestnut leaves that have been soaked in Old Forester or Woodford bourbon, which give it this creamy, dense cheese a unique flavor. As it ages, the cheese takes on a more intense flavor as it dries.
