Sartori Reserve BellaVitano Gold Cheese has been named "Grand Champion" at the prestigious 2013 World Dairy Expo Championship Dairy Product Contest. The Wisconsin based competition featured hundreds of entrants from the world's finest cheesemakers, yet Sartori was able to claim first place in the Hard Cheese category at the contest, with Sartori's Limited Edition Pastorale Blend®, a mixed milk cheese, also taking first. Rounding out the competition was Sartori's Chai BellaVitano which was awarded a third place medal in the Hard Cheese category.
In a press release, Sartori’s Master Cheesemaker, Mike Matucheski, conveyed excitement about the BellaVitano Gold. Matucheski said, "BellaVitano Gold really is a special cheese for us. It all starts on the farm, where our patron farm families produce the best rBST free certified milk possible. Then it's off to the plant where we turn fresh milk into cheese typically within hours."
As a Sartori Original, this one of a kind cheese made by Sartori Master cheesemakers, starts out like a Parmesan, it has a light fruity note but with a surprisingly creamy, rich texture. It finishes with a sweet and tangy hit.
Sharing the credit with his team Matucheski said, "Our artisans individually handle each wheel of BellaVitano several dozen times – our wheels never leave us until a cheesemaker says they're ready. Honestly, we're proud of each wheel of BellaVitano that leaves our door and it's all these things coming together that make for an extraordinary cheese."
