PLYMOUTH, WI
Sartori Master Cheesemaker Mike Matucheski was named the 2014 "Grand Master Cheese Maker" at this year's Wisconsin State Fair Cheese & Butter Auction. Sartori's Reserve Chai BellaVitano® was also selected as Grand Champion, something which now 4 time Grand Master Matucheski is very proud.
"Cheese making takes a lot of practice and skill. You've got to have that knack for both the science part and the art. Having a background in herbs and beer has really expanded my creativity to craft new and unique cheeses for Sartori," Mike explained.
Pat Mugan, Sartori Vice President of Research and Development, spoke proudly about Mike and his work with the company.
"Mike's a true artist and cheese making is his passion,” he said. “He's well versed in different flavors and how they'll impact a piece of cheese when added to the rind. With our Chai BellaVitano, Mike tried all sorts of different chai mixtures before he found the perfect blend."
In all, Sartori won 5 ribbons at the State Fair, receiving recognition for its Rosemary and Olive Oil Asiago, Extra-Aged Goat, Classic Asiago, and Espresso BellaVitano in addition to its Grand Champion Chai BellaVitano.
According to CBS 8, all funds raised during the Cheese & Butter Auction were donated to student scholarships and dairy promotions at the Wisconsin State Fair.
