WASHINGTON, D.C. Wagshal’s Imports’ Fermin ibérico de bellota smoked panceta was featured on one of Food Network’s episodes of Chopped. The bacon-centered episode had competitors utilize the smoked panceta in the main course battle. If you missed the episode, you can catch it again on TV this Sunday, February 23 at 6pm/5c. The multi-award winning smoked ibérico panceta comes from the same acorn-fed Iberian pigs from Fermin, a family owned and operated company near Salamanca, Spain, according to a press release. What’s special about this smoked panceta is that it’s not as lean as traditional American bacon, so there’s more flavor in each bite. The raw ibérico de bellota belly is cured for 4 weeks and hickory smoked for at least 12 hours to create its unique, distinguished taste. The pigs gorge on olive shaped acorns from indigenous oak trees in Spain, which helps infuse the fat with flavors similar to olive oil.
