SACRAMENTO, CA Today I will be remembering three of my favorite cheeses. I've taken great care in selecting some of the best from my time writing The Wine & Cheese Corner. I've also selected one of my favorite wines, a Pinot Noir. Wine: Pinot Noir, Baileyana, Edna Valley, 2010 Cheeses: Somerdale's Red Dragon (aka Y Fenni) Somerdale's Tintern Cypress Grove Chevre's Humboldt Fog
Somerdale's Red Dragon (aka Y Fenni), a traditional English cheddar from the UK, made using cow's milk, light brown ale and whole mustard seeds: If you enjoy the taste of Dijon mustard, you will love Red Dragon. This moist, spreadable cheese has a mild spiciness and tastes very strongly of Dijon mustard. I happen to really like the taste of mustard seed, so for me this was quite a treat. It paired well with my dry Riesling in a previous article. It was not as great of a pairing with the Pinot Noir, though I enjoyed it all the same. While not always the appropriate cheese, I could easily see this cheddar has found its way onto my plate on a regular basis. Somerdale's Tintern, an English cheddar with chives and shallots: This cheese continues to be awesome! It paired well with my wine before, and this time it proved that it goes well with many things. Its taste always reminds me of a baked potato. In fact, it would probably go well on a baked potato. The Tintern had a buttery texture and delicious rich taste that is unlike any other cheese I've experienced. Highly recommended. Cypress Grove Chevre's Humboldt Fog, a semi-soft goat cheese from Humboldt, CA: With ash marbling and rind, this spreadable cheese has a creamy, light flavor with a slight lemon taste.
