As a first timer at the Winter Fancy Food Show, I was lucky enough to get the chance to talk with Katie Fuhrmann, Head Cheesemaker at LaClare Family Creamery. She spoke about the wonders of goat milk cheeses and retail opportunities, while introducing me to a few new products.
Katie told me that currently the company is focused on its hard line of goat milk cheeses, now that it's been able to secure a high-quality goat milk supply. This has allowed the company to offer sustainable and fresh goat milk cheese while still offering a full lineup of products. Katie further explained why this is essential.
“This is really important because now we can really have nice brand representation on the shelf at the different retailers anywhere from some cave-age style cheeses all the way to some of the fresh style, more of the everyday-type cheeses that we can offer,” said Katie. “It gives people a good variety and offers very different price points, too, which I think is really important when you're looking at your different lineup of your products.”
Katie went into further detail, describing some of the company’s newest offerings. The creamery has begun a focus on limited-time products to entice consumers with exciting new flavors.
“Coming out this spring is an Everything Bagel, and we have a Maple Bourbon that is currently available,” Katie said.
I, for one, am pretty excited to see what LaClare has in store this year, especially since the company has its eye on new and bold flavors.
