For nearly two decades, La Quercia has been growing the profile of American cured meats, celebrating traditional curing processes and sustainable and humane sourcing practices.
I recently had the opportunity to speak with Matthew Kulpa, National Sales Manager, to learn more about La Quercia, its newest product line, a packaging refresh that better reflects the craftsmanship and quality of La Quercia’s, and a new verification program through the Global Animal Partnership.
“We’re really excited to be launching our new spreadable meats,” says Kulpa. “Over the past few years, our Spicy Prosciutto Spread, or ‘Nduja, has been extremely popular, so we decided to expand on that category.”
As of July, Matthew tells me, La Quercia will offer a Pancetta spread and Pesto Bianco: Savory Prosciutto Lardo—or “prosciutto butter.”
Additionally, La Quercia is introducing new packaging for its Borsellino Salami line.
“We are adding a few new label claims to our retail sliced,” Matthew adds. “We are now moving to non-GMO pork. Also, through the Global Animal Partnership, we are happy to announce, September 1st, that all of our Americano line will be [made with] pasture-assisted pork.”
