With Black Kassel’s latest line, we’re taking the guesswork out of gourmet meat & cheese pairings. Available in Speck and Edam, D’Amour Salami and Gouda, and Old Forest Salami and Butterkäse varieties, each of our three new plates features a unique dry-aged meat served alongside a complementary specialty cheese.
Old Forest Salami is a tribute to the Black Kassel brand’s Germanic roots. With initial meaty notes followed by subtle savory tones, this salami finishes with hints of pepper and a mouthwatering mild and sweet Ash wood smoke flavor. Our Old Forest Salami is complemented by one of the world’s fastest-growing cheese varieties: Butterkäse—a semi-soft cheese, popular in Germany and Austria for its creamy texture and buttery taste.
Black Kassel D’Amour Salami is a lovely seasoned salami—coupling succulent meaty notes and just the right amount of tang. Hints of garlic along with pronounced black pepper and smoke notes are perfect for pairing with Gouda—one of the most popular cheeses in the world. A semi-hard cheese celebrated for its rich, unique flavor and smooth texture, Gouda is ranked in the top 10 best-selling cheeses in the USA.
Finally, our specialty Speck is naturally wood-smoked, then dry-aged to perfection in drying rooms that reflect the cool dry climate of the product’s origin—the mountains of South Tyrol. The meat's buttery texture pairs nicely with Edam, a cheese with a supple texture with a mild, smooth, and nutty flavor.
