At the Winter Fancy Food Show 2019, I sampled a lot of products, so many that it’s hard to keep track. However, there was one product I can’t forget, and that is Moon Cheese. A product of the Nutradried Food company, Moon Cheese is a dried, shelf-stable, crunchy cheese snack that is as tasty as it is distinctive. I had the chance to speak with Mike Pytlinski, CEO, who explained the science behind the unique cheese.
“A number of scientists at the University of British Columbia came up with this idea for radiant energy vacuum technology, which sounds pretty scientific,” explained Mike. “Historically, there's been two ways of drying: freeze drying and air drying, neither of which are particularly efficient, because in some cases, it has major impact on the raw material while it's being dried. Our method dries products very quickly, very gently, and very efficiently. It retains most of the inherent aspects of the product, but what you remove is about 40-45 percent of the moisture.”
The result is a product that is 100 percent cheese, full of nutrients, shelf stable (good for up to a year), and, of course, crunchy. These attributes make Moon Cheese a hit with consumers, many of who are on low-carb, high-protein diets, such as Keto. Shoppers can expect around 10 grams of protein per ounce, while still enjoying a low-carb, low-sugar snack. As with any snack, options are important, and at the moment, Moon Cheese comes in three classic flavors—cheddar, gouda, and pepper jack.
The poppable treat is planting itself firmly in the retail space, in locations such as Costco, Whole Foods, Publix, Wegmans, King Soopers, and Starbucks, as well as being available online.
The company has a sharp eye on the future, coming up with new ways to satiate consumers’ wants and needs. A Siracha flavor has recently been introduced, though it is only available online, for now.
“Between now and the end of the year, you’ll see better and new products,” commented Mike. “We are looking at an effective relaunching of the brand in the coming months – including new messaging, improved product quality, and new varieties. We have a great product that we're going to make even better—with a new look, new feel, new varieties, and new customers, we're hoping, between now and the rest of this year.”
With a bold plan for 2019, the convenient and unique treat will surely be popping up on more shelves across the country. Consumers crave the new and different, and Moon Cheese is most definitely different—and new to many shoppers’ palates.
