Murray’s Cheese is expanding its iconic Bleecker Street cheese shop and introducing a fast casual Murray’s Mac and Cheese concept—pairing with Brooklyn-based pasta maker Sfoglini to introduce six signature mac and cheese flavors.
According to a Forbes report, the new concept will be “chef-driven” in its culinary focus and won’t feature traditional macaroni, per se. Murray’s Mac and Cheese will instead feature Sfoglini’s signature radiatore—made from organic durum, semolina, and water.
The menu, created by Executive Chef David Elkins, will feature all-cheese Classic mac, Buffalo Chicken, and Barbecue options—as well as more off-the-beaten-path fare. French Onion will feature gruyere, raclette, caramelized onions, and bacon, while Carbonara will offer fontina, mozzarella, pancetta, and peas. And, according to Food & Wine, the new concept will even offer a Breakfast mac complete with breakfast sausage, bacon, cheddar, and egg.
Murray’s Mac and Cheese has its soft open on February 24th, building toward a grand opening on March 1st.
