The specialty food stalwarts at Les Trois Petits Cochons are expanding into a new on-trend category in 2019—with the introduction of Sous-Vide Egg Bites, a high-protein, low-carb line perfect for both culinary creations and grab-and-go snacking.
The line is new, but I learned from CEO David Kemp, that it traces its roots deep into the history of the more-than-40-year-old company famed for its artisanal pâtés, mousses, terrines, sausages, smoked meats, and other French specialties.
“Our Sous-Vide Egg Bite idea actually came from one of the original products we used to sell at our Greenwich Village shop: traditional French quiches,” explained David. “The bites take us back to our history, and also fall into a completely new category of grab-n-go snacks, so we wanted to experiment with what we can do in this new space. There is so much opportunity in terms of merchandising and placement. The egg bites are also full of protein and low in carbs, contain no sugar, and use cage-free eggs, which are in line with industry and consumer trends.”
Les Trois Petits Cochons Sous-Vide Egg Bites are available in four flavors—each in a 2.5 oz package that packs 10 grams of protein. Varieties include: Ham & Espelette Pepper, Spinach & Feta, Bacon & Swiss, Prosciutto & Gruyère.
“We wanted to combine innovation with gourmet taste, while also staying true to our standard of high-quality ingredients,” David added. “Our Prosciutto & Gruyère egg bite was the first recipe we finalized. We also we created an extension to our Basque line with our Ham & Espelette egg bite, which has a nice, subtle heat from AOP Espelette Pepper. Additionally, we wanted to offer a vegetarian option with our Spinach & Feta egg bite, and our Bacon & Swiss egg bite is most similar to the original French Quiche Lorraine.”
The Sous-Vide Egg Bites are currently available at select retailers in New York City and through 3pigs.com—with a nationwide retail launch coming soon.
Attendees at the 44th Winter Fancy Food Show, held January 13-15 at the Moscone Center in San Francisco, can visit booth #826, where the Les Trois Petits Cochons team will be sampling its complete Sous-Vide Egg Bite line.
