Brooklyn Cured Founder Scott Bridi Talks New Retail Salami Line

It’s almost summertime and what does that mean? The Summer Fancy Food Show is right around the corner!

Scott Bridi, Founder of Brooklyn Cured, had a moment to chat with me about the company’s new retail salami line, which will launch in Q4 of this year with a preview at the Summer Fancy Food Show.

Scott Bridi, Founder, Brooklyn Cured“Our new line of retail salami will be available to buyers in late August, early September, which is just in time for holiday sets for deli and specialty departments, as well as gift baskets,” he said.

The inspiration for this line draws on cocktail culture, spirits, and New York experiences. Scott added that each of the company’s five flavors of salami is truly unique in its own way.

“Our salami with lamb and za'atar is inspired by the great Middle Eastern food carts and restaurants that we are lucky to have in New York City,” Scott explained. “Our love for lamb runs deep, and za'atar is such an amazing spice blend that we wanted to feature in a salami.”

The company has also introduced salami with flavors inspired by cocktails, spirits, and beer such as:

  • Bourbon and Sour Cherries (a classic Manhattan cocktail)
  • Rye Whiskey and Orange (a classic Old Fashioned cocktail)
  • Belgian Ale and Lemon Zest (inspired by a classic Beer Garden)
  • Mezcal and Lime (a smoky spirit that's perfect for salami)

For Brooklyn Cured packaging, each salami is vacuum-sealed then wrapped in white butcher paper.

The new line of salami will be available for consumers towards the end of August

“We prefer vacuum-sealing because it maintains product integrity and prevents it from drying out,” Scott said. “We want consumers to have the most optimal experience possible while enjoying our products.”

In terms of the market response, Scott said it has been amazing.

“Buyers across the country are in love with the packaging and the unique flavor profiles,” he claimed. “We respect classic charcuterie traditions and flavor profiles, but our new line is breaking tradition in a big way as well. We believe that the market is ready for a fresh new look at the salami category, with inspiration that's truly New American.”

All products are available in 5 oz chubs of 12-case packs. The items are shelf-stable, so they can be merchandised anywhere in the store and shipped without insulation or ice packs.

“It's great to merchandise these items in baskets on top of deli cases for consumer visibility,” Scott noted.

He explained that the company’s approach to salami and charcuterie is winning over a new generation of customers. Its products resonate with people who care about regenerative agriculture, and who are looking for exciting new flavor profiles!
