Carr Valley Cheese's Elle Fearing Discusses Plant Expansion, Event Showcase, and More

On the heels of a recent operational expansion, Carr Valley Cheese is getting ready to hit the show floor at SIAL America in Las Vegas, Nevada, from March 28–30. There, the team will show off its diverse, high-quality lineup of varieties and detail what sets the cheesemaker apart from others in the sector to key importers, foodservice companies, distributors, retailers, and wholesalers.

Elle Fearing, National Sales and Marketing Representative, Carr Valley Cheese“We were excited to receive grant funding from the Wisconsin Cheesemakers Association Collaborative Market Access Grants (CMAG) to attend what will be our first-ever export show,” says Elle Fearing, National Sales and Marketing Representative. “We will focus on several items that show attendees what Carr Valley can do and what makes our brand unique in the American market.”

Carr Valley’s display will include many of its American Originals, such as Marisa, Gran Canaria, Boozin Billy, and Sante—all of which won top awards this past week at the United States Championship Cheese Contest.

At the show, the cheesemaker will also discuss the completion of its addition to its Mauston plant last fall. With this recent expansion, Carr Valley has increased brine capacity, dramatically impacting the amount of cheese it can produce at the facility. Additionally, the company was able to identify and fix its bottleneck, enabling it to accommodate larger volumes.

“With this new brine system, we are expanding our bulk formats to offer loaves from euro block of our brine-salted cheeses, including Fontina and Gouda,” explains Elle. “We still make all our cheese the old-fashioned way, in small, open vats. Although we continue to grow and expand, we’re still rooted in old family traditions. These practices, along with a team of passionate cheesemakers, have made us the top award-winning cheese company in the world, which we’re incredibly proud of!”
