Christy Khattab Talks Shop on Updated Cowgirl Creamery Recipes

“Cheese is a living, breathing, evolving food, going through many iterations over time.”

This one quote from Christy Khattab, Director of Marketing, is a shining example of our industry’s commitment to excellence. Cowgirl Creamery is an innovative cheesemaker claiming its hold in shoppers’ carts, and it is doing so with a few recipe refreshes.

Christy Khattab, Director of Marketing, Cowgirl Creamery“Since the beginning of early 2023, we have made some changes to our products to provide customers and consumers with the highest quality, most delicious cheeses, continuing to craft cheeses from local, Northern California organic cow’s milk at our Petaluma, California, creamery,” Christy shares. “Devil’s Gulch, Pierce Point, and Red Hawk are now new and improved, and we’re excited to share them with our loyal fans.”

Made with the cheesemaker’s Mt. Tam as a base, Devil’s Gulch and Pierce Point are now triple cream cheeses. Both offerings have become even more luscious and delicious than ever before.

Red Hawk, on the other hand, is a washed rind cheese known for its bold and distinct Northern California flair. Production for this cheese moved to Cowgirl Creamery’s Petaluma creamery earlier this year, enabling the company to scale production volumes to create a more consistent product while staying true to the funk Red Hawk fans love.

“We took this transition seriously with trials, tastings, and soliciting feedback from people close to Red Hawk. In side-by-side comparisons, even the biggest Red Hawk fans preferred the new Red Hawk!” Christy tells me. “Beyond its rough and rowdy aroma, this cheese has a rich and meaty flavor, with balanced notes of cured meats and a kiss of ocean air. It’s like Mt. Tam’s funkier, super cool cousin.”

The new recipes are already available nationwide, and Christy’s got some tips to move those wheels.

“At Cowgirl Creamery, we know how crucial retailers are to getting our cheeses into the hands of consumers, and we want to say thank you!” says Christy. “We recommend displaying our cheeses in the coffin case and cross-merchandising with charcuterie, wine, crackers, and all the other delicious things that are perfect for spring celebrations, summer picnics, and of course the upcoming holiday season. These are small-format, 7 oz cheeses that are as at home on a cheeseboard as they are on a road trip.”

Shoppers’ interest will pique throughout this holiday stretch as events and gatherings take place, so be sure to get ready. Cowgirl Creamery offers marketing support including Instacart advertising for all of its exact-weight products, social media promotion, a store locator, and educational collateral.
