After more than 100 years, The Ambriola Company is proud to announce the return of the iconic Locatelli Parmigiano Reggiano to the U.S. market. The Auricchio family—owners of the Locatelli brand and its dedicated production facilities—has committed the entire output of two of its top-tier Parmigiano Reggiano plants exclusively to the United States.
The newly available Locatelli Parmigiano Reggiano di Montagna undergoes a rigorous wheel-by-wheel quality selection process and is aged for a minimum of 24 months. It will be offered in exact-weight 200g (7oz) wedges, as well as in 1/8th and 1/4 wheel formats.
This special "di Montagna" designation means the cheese must be produced and aged in select facilities located at least 300 meters (approximately 1,000 feet) above sea level. Certified as Prodotto di Montagna (Mountain Product) by the Consorzio del Parmigiano Reggiano, it is naturally enriched by its unique geographic location in the Apennine mountain range. The area is influenced by the local Marino wind from the Mediterranean Sea, which contributes to the cheese's exceptional, organic taste.
