Old Quebec, a long-standing Cheddar brand, recently announced the addition of two new formats to its product portfolio. The 8 oz pre-pack, shelf-ready cuts are available in the brand’s 3-Year Vintage and 7-year Vintage Reserve Cheddar, giving buyers a chance to fortify their current cheese offerings.
“The quality of Old Quebec Cheddar begins with the milk. Only the highest quality and freshest milk, sourced from the St. Lawrence River Valley is used. Once paired with the carefully balanced natural bacterial cultures, this milk produces an exceptional slow-aged Cheddar,” commented Dan Neff, President and Owner.
A press release explained that, as the company continues to grow in retail spaces, it will continue to expand its pre-pack options.
During the aging process, the Cheddar’s moisture, acidity, salt levels, curd quality, texture, and flavor are all assessed carefully and at regular intervals. Certain subtle flavor attributes detected at grading are known to take the Cheddar down different flavor paths.
“Only the highest quality cheese can withstand the slow-aging process,” added Chief Executive Officer William Roche. “We had to search the world for the best Cheddar to meet our high standard and even then, only a limited amount makes the cut.”
A handful of Cheddar blocks are identified as exceptional candidates for unique aging, which means the cheese is aged for seven years or more. The brand’s Reserve Cheddar is a prime example of this.
“Old Quebec Vintage and Reserve Cheddar can be found in many of the finest cheese shops in America. While our 3-year Vintage is the volume leader, it is the 7-Year Vintage Reserve that is experiencing the most dynamic growth,” remarked Aaron Deppen, Wholesale Sales Manager of S. Clyde Weaver, the parent company of the Old Quebec brand.
The 8 oz format of Vintage and Reserve packs a lot of punch in a small size.
“This option is excellent for those who do not utilize a cut-n-wrap program, and yet wish to fill SKUs with a premium product,” Deppen noted.
