This new formula will first be integrated into the supplier’s new line of Olli Salamini Snacks—which are being debuted to consumers now—and the company plans to introduce the preservative-free process to its line of Olli Chubs later this year.

“This curing process utilizes emerging technology and a methodical approach to ensure quality and safety standards, so we are actively exploring methods to apply this process to our full line of Olli salami products,” Oliviero shares.

Oliviero also points to another key offering gaining popularity in the market.

“A major trend we’ve seen in recent years is an increased demand for convenience in deli meats,” he says. “Whether it’s grab-and-go snack packs or pre-packaged charcuterie trays, consumers want to make the process of enjoying salami and other deli favorites easy.”

Olli Salumeria has responded to this shift in consumer demand with its line of Olli Snack Packs, which pair its famous slow-cured Italian-style salami with high-quality cheeses and artisanal crackers in a convenient 2 oz package—just another offering drawing consumer attention to this rapidly growing lineup.

“Our growth has accelerated in recent years, and we are heavily investing in our future in the form of expanded marketing and sales support,” Oliviero notes. “In fact, this year we are investing 3.5 percent of our revenue into marketing, which will fuel our market share growth as we increase both production capacity and distribution channels nationwide. Our plan is to double our business by the end of 2026.”
