A new launch is on the horizon for Village Gourmet’s Three Little Pigs brand, and it is sure to make a splash in the specialty department. In a recent interview with Maha Freij, President of Three Little Pigs, I got a sneak peek at the new Rillettes de Porc.
“Dating back to medieval Touraine, Pork Rillettes have stood as a French delicacy since the 15th century,” she began telling me. “This classic dish involves slow-cooking pork for 12 hours in duck fat to achieve a succulent, melt-in-your-mouth texture that is then shredded, resulting in an irresistible confit-style spread. Rillettes de Porc have no antibiotics ever used, are vegetarian fed, all-natural, have no preservatives, no hormones, are gluten-free, and are handcrafted in small batches.”
According to Maha, unlike the other Pork Rillettes on the market, which are cooked in Pork Fat, Three Little Pigs’ Rillettes de Porc are cooked in Duck Fat for optimized flavor.
“Pork Rillettes are wonderful when savored on a fresh French baguette and paired with a full-bodied, fruit-forward red wine to balance the richness of the Pork Rillettes,” Maha added. “For an appetizer that's sure to delight any crowd, turn Rillettes de Porc into pork croquettes by scooping the rillettes into bite-size portions, rolling them in breading, and frying until golden brown.”
