Olli Salumeria, Roth Cheese
Olli Salumeria's salame is slow cured at low temperatures and has its water activity and Ph levels carefully monitored. Olli's items offer a host of different flavor profiles from the spicy Calabrese to the smoke Napoli and aromatic Toscano. The salame items are created from 160 year old recipes that were handed down to Olli Colmignoli. The pork comes from pigs that have been pasture raised on family owned sustainable farms.
The award-winning Wisconsin artisan cheese company is updating its brand to better represent its Wisconsin roots and will feature imagery of the region's trademark grasses. Roth Cheese's flagship Grand Cru Gruyere will be the first cheese to reflect the new brand imagery. Roth's other products, including Van Gogh Gouda, Havarti, and American Originals GranQueso and Buttermilk Blue, will feature the new and improved appearance in early 2013. Guido Kaelin, VP of Marketing, explains, "Grand Cru Gruyere is such a versatile cheese with a strong fan base and heritage that is so closely tied with the company's traditions and with southern Wisconsin that it makes sense for it to be the lead in our re-branding effort."
