Sartori’s Chai BellaVitano® has taken home the gold as the best New Dairy Product as the 2013 International Cheese Awards in Nantwhich, UK. Sartori’s offering outcompeted 4,285 cheeses from 27 countries. It also won in the "Cheese, Savoury Additives” category, as well as six other awards. Today's results are a true testament to the hard work and dedication they put into their craft."
Swiss Valley is highlighting its Caves of Faribault the oldest blue cheese facility in the country. Started in 1935, the sandstone caves are 53 degrees year-round and boast 99% humidity, good air circulation and unique micro flora that give the cheese a distinctive flavor profile. The company operates two unique programs out of the caves – its blue cheese business and affinage ripening business. Its handmade cheeses, including St Pete’s Blue & Verdant Blue, are full flavor but are free of bitterness. It also boasts an extensive ripening program in collaboration with other cheese makers.
