Queen Bee is a savory Utah Cheddar that brings the creaminess of Beehive’s award-winning Promontory Cheddar with an umami twist created by porcini mushrooms that have been ground into a fine powder and rubbed on the rind of the cheese. After that, it is aged to perfection, creating a taste-bud-tingling cheese that has earned the cheesemaker the Super Gold award at the 2021 World Cheese Awards.

“What sets Beehive apart from other cheeses is our approach to flavor,” adds Britton. “Since we rub seasonings on the outside of the cheese and allow it to age, the base cheese is still the star of the show, and the seasonings are there to help make subtle adjustments to flavor during the process.”

While there are other mushroom cheeses on the market, Britton says that Queen Bee is set apart by its mild mushroom flavor that provides earthy, meaty, brothy notes throughout the cheese. All of Beehive’s porcini mushrooms are sourced from Regalis Foods, which forges its mushrooms seasonally, and as such, the mushrooms change in color, saturation, and hue to provide unique characteristics in every Queen Bee batch of cheese.
