IDDBA was filled to the brim with master cheesemakers, but Belton Farm, maker of award-winning handcrafted cheeses, drew my eye immediately. Showcasing classic and contemporary styles of British cheese made from locally sourced, grass-fed, and free-range milk, it’s no wonder I had to talk to Justin Beckett, the company’s Managing Director, to learn more about its latest innovations.
“We’re launching our fixed weight range of English territorial cheeses,” Justin began. “We’ve got six cheeses in the range—Port Wine Derby, Sage Derby, Double Gloucestor with Chives and Onions, Saxonshire, a layered cheese; and we’ve launched the range to complement our Red and White Fox, which we launched in the States a couple of years ago.”
To make the fixed weight cheese line shine, Belton Farm has elected to use a semi-transparent film to show off the marbling effect. (Cue salivation from me.)
